Peanut Butter Pie Bites

Bite sized peanut butter pie is coated in chocolate and topped with Reece Cups and sea salt. Keep them in the freezer and grab one whenever you get a craving!

  • 1 cup crushed Teddy Graham cookies I used honey flavored and crushed with food processor
  • 3 tbsp unsalted butter melted
  • 4 tsp sugar
  • 6 oz room temperature cream cheese
  • 3/4 cup peanut butter
  • 2/3 cup powdered sugar plus 2 tbsp seperated
  • 3/4 cup whipping cream
  • 1 tsp vanilla
  • 1-2 packages light cocoa candy melts or prefered melted chocolate
  • finely chopped reece cups
  • coarse sea salt
  1. Beat cream cheese, peanut butter, and sugar for 2-3 minutes until fluffy.

  2. In a separate bowl, beat cream with whisk attachment until it thickens.

  3. Add sugar and vanilla. Beat until stiff peaks form.

  4. Fold whipped cream into peanut butter mixture until fully combined.

  5. Set aside until ready to assemble your bites.

  1. Stir together Teddy Graham crumbs, sugar, and melted butter.

  1. Pack about 1 1/2 teaspoon of crust mixture into the bottom of each square mold.

  2. Spoon or pipe the filling over the compacted crust. Smooth and level the tops with an offset spatula.

  3. Place molds in freezer for about 20 minutes.

  4. Remove the frozen sqaures from the molds.

  5. Dip each sqaure in melted chocolate and immedietly sprinkle with chopped peanut butter cups and sea salt. You may keep half of the squares in the freezer while you coat the other half in chocolate so they stay cold. They are easier to dip in the chocolate this way.

  6. Store the peanut butter bites in the freezer or refridgerator.
