I have always been a huge fan of Rice Krispie Treats. I am fully confident that I could polish off a whole tray of them all by myself. (No shame.) They are one of those desserts I find my self making often because they are so easy to make and everyone loves them. Over the years I have made quite a few variations of the treats but these Peppermint Bark Krispies top the list.
I was actually eating one of my all-time favorite holiday candies when the idea for this recipe came to me. Have you ever had Hershey’s Candy Cane Kisses? If not, go now! They are soooo good! This isn’t even the first recipe I’ve posted using these candies. Be sure to check out my Candy Cane Cookies next.
Take a look at how I prepared these treats before reading on…
The Candy Cane Kisses
The first thing I had to decide was how I wanted to add kisses to the Rice Krispie Treats. I decided to go with melting them down and adding them to the dry cereal before mixing in the other ingredients. This totally works. Everything else within the treats is traditional. Marshmallows and butter are heated and combined, then the candy-coated cereal is added.
Preparing The Krispies
The only thing to keep in mind is that you don’t want the melted kisses to harden after combined with the cereal. I melt my kisses and a small dab of shortening in the microwave at medium heat and as soon they are melted I start on my marshmallows and butter.
I melt the butter on the stovetop in a large pot over medium-high heat and then add the marshmallows.
While keeping an eye on the marshmallows and frequently stirring them, I simultaneously add my melted kisses to the dry cereal in a large bowl and mix until fully combined. You can set the cereal aside until your marshmallows are totally melted and smooth.
When your marshmallows are ready just add the candy-coated cereal to the pot and stir until fully combined.
Transfer the mixture to a greased 13×9 pan and leave them for a while to set.
Adding The Chocolate and Peppermint Topping
Your Krispies will be dipped and drizzled with chocolate and then topped with crushed candy canes.
To crush your candy canes you can either use a food processor (easiest way) or place the candies in a bag and smash with a hammer.
For the chocolate, I used milk chocolate because that is my family’s favorite. Dark chocolate would be good too! Whichever you prefer. Carefully melt the chocolate when your Krispies have hardened enough to cut.
Line your work surface with waxed paper and cut your Krispies into squares.
One at a time, dip the bottom of your Krispie square into the melted chocolate about 1/4 of the way up. Shake off the excess and place the square with the melted chocolate side down onto the waxed paper. Continue this until all of the bars are dipped.
Next, drizzle the remaining chocolate over the top of the squares and sprinkle with the crushed peppermint candies.
Leave the squares out until the chocolate hardens. At this point, I like to take a sharp knife and clean up the sides by cutting off the excess chocolate.
That’s it! Now they are ready to serve, gift, or display on your counter for holiday guests.
Here are some of the items used to make these tasty treats…
Peppermint Bark inspired rice cereal treats are easy to make and taste deliciously festive.
- 12 ounces marshmallows
- 5 1/2 cups rice cereal
- 3 tablespoons unsalted butter
- 50 Hershey candy cane kisses melted
- 4 teaspoons shortening divided
- 10 ounces chocolate milk or dark
- about 6 crushed candy canes
Spray your 13x9 pan with non-stick spray or coat with butter.
Measure out your cereal into a large mixing bowl and set aside.
Measure out your candy cane kisses into a microwave safe bowl and add half of your shortening. Microwave at 60% power for 1 minute. Stir candies and continue microwaving at 60% power for 30 second intervals until melted. Be careful not to burn them and stir between each interval.
Gently stir the melted kisses into the rice cereal fully coated and set aside.
In a large pot over medium high heat melt your butter stirring continuously.
Add your marshmallows and continuously stir until they are completely melted.
Add you candy coated cereal to your melted marshmallows and gently stir until everything is fully combined.
Transfer your cereal/marshmallow mixture to your 13x9 pan and spread evenly. I find spraying my hands or a small piece of waxed paper with non-stick spray helps spread the treats more easily.
Leave the treats to firm up and set.
Cut your treats into squares and line your work surface with waxed paper.
Melt your chocolate and the remaining shortening in the microwave the same way your melted your candy cane kisses. 60% power for 1 minute and then 30 second intervals stirring frequently.
Dip the bottom of each square into your melted chocolate and place the square chocolate side down onto the waxed paper.
Drizzle the tops of each square with more chocolate and sprinkle with the crushed candy canes. Only do a couple of squares at a time so that the candy sticks before the chocolate sets. Leave the square to sit out until all of the chocolate has set.
Once the chocolate has hardened, trim the excess off with a sharp knife for a clean look.
Store your krispies in an air tight container of a zip-top bag.
