Beach themed cookies are my favorite to decorate, hands down. Yup, even more than Christmas! As soon as the weather starts getting warmer and spring is coming to an end, I get excited. Phenomenal Fudge Brownies
When it comes to brownies, I am team fudgy all the way! I probably wouldn’t turn a cakey brownie down, but if I could choose, I’d pick fudgy every time. There’s just something so appealing to me about a brownie that is chewy, rich and has a fudge-like consistency. I love chocolate and a good fudge brownie is probably my favorite way to eat it! The same can be said about my boys. They will clear out a pan of brownies in a snap! When I set out to come up with my own recipe my kiddos were all too willing to be my judges. I did some research and started from scratch to find the perfect combination of ingredients and methods. I did lots of baking, they did lots of tasting, and we all agree… this one’s a winner!

Every year my childrens’ school puts together luncheons for the teachers during teacher appreciation week, and I am more than happy to send in some sweet treats for the event! I think it’s the least I can do to show the staff how grateful I am for them. I have been blessed when it comes to my kids’ teachers… they have all been amazing. Not only do I love my kids’ teachers, but my mom was a teacher, my sister is a teacher, and I have some really good friends who are teachers. I will always have a special place in my heart for teachers.

Everyone’s Favorite Zucchini Cake
Ahh, zucchini cake. Where do I even begin? Do you know how some smells can evoke a memory? Well, the smell of this cake baking in the oven takes me back to my childhood. It fills the house with the scent of cinnamon and I just feel such comfort in my soul. My mom made this cake all the time when I was growing up. If we were growing zucchini on the farm that year, it would be made even more often. I’m pretty sure this cake is the first thing I ever baked and it certainly is my favorite.
